Apple Crumble

Ingredients:
5 large seasonal cooking apples, peeled, cored and cut into slices
1 Tbs. fresh lemon juice
1/2 tsp each cinnamon, nutmeg, and ground ginger
3/4 cup firmly packed light brown sugar
1/2 cup flour

4 Tbs. (1/2 stick) butter at room temperature, cut into pieces
3/4 cup rolled oats
Good quality vanilla ice cream (this is where you will want to splurge!)

Directions:

Preheat oven to 190
°C/375°F.  Spread the apples evenly over the bottom of the baking dish and toss with the lemon juice, some extra sugar if the apples are very tart, and the spices.  In a bowl, using a pastry blender or fork, mix together the brown sugar, flour, cinnamon, butter and rolled oats until well combined. Sprinkle evenly over the apples.  Bake until the top is golden and the apples are tender when poked with a knife, about 30 minutes. Transfer to a wire rack and let cool. Serve hot or warm topped with the ice cream.
