Poached Skate with beurre noir

Serves two

Ingredients:

1 large wing of skate (900g comfortably serves 2) cut in half.

peppercorns

dash of white wine

capers

unsalted butter (100g)

 

For the beurre noir:

In a small saucepan melt the butter over a low heat. It will separate; let the solids sink to the bottom. they will brown nicely.... when this happens, add some chopped capers.

For the skate:

Put water, peppercorns and a dash of white wine into a frying pan. You might need to use two depending on how big your wing is.

When the water is simmering, add the wings. They'll take about 12 mins - turn over half way through.

Serve with green beans and new potatoes. Drizzle beurre noir over the top.

Also tasty with coconut rice and roasted plantains.

Lid?

Hi Tilly,

Good to see skate-wings being used; excellent ingredient. For the benefit of newbies who might be reading, though, would you cover the pan with a domed lid and keep in the steam (i.e. braising) or are you putting in enough water to cover the fish (i.e. proper poaching)? I suppose what I'm also asking, then, is how  deep your frying pan is...
