Carrot and Orange Salad

Now that the late Winter and early Spring are bombarding us with cold and wet, it's time to take advantage of airmiles-less citrus fruits, in season in Europe from late December through to the end of March.

1. Grate four to five carrots and place in a bowl that has been rubbed with a crushed clove of garlic.

2. Shave off the zest of and extract the juice of an orange. Do likewise for half a lemon. Add a few drops of oil (olive or other).

3. Add this to the carrots, season with a pinch of salt and pepper, and then stir thoroughly. OPTIONAL - think about adding either coriander or cinamon, both excellent partners for carrots.
